How to roast hazelnuts in the shell: Oven Method
To roast your fresh BC Hazelnuts in the shell, first turn your oven on and set to 300 degrees Fahrenheit. Preheating your oven is the first step to getting a good roast.
Spread your hazelnuts out on a cookie sheet or shallow pan. Wait until the oven has reached temperature before putting them in the oven.
Place your sheet or pan of hazelnuts (still in the shell) into the oven.
Set a timer for 30 minutes.
Turn off the oven after 30 minutes, but leave the hazelnuts in the oven for another hour! (You can re-set the timer for one hour.)
After taking the hazelnuts out of the oven, you can begin enjoying them right away, or put them in a basket with a nut cracker for your guests.
Do not leave roasted hazelnuts out for too long, as they will not keep as well as fresh hazelnuts. Roasted hazelnuts are best eaten within a couple of weeks.

Shelled, roasted hazelnuts should be eaten right away, and most likely they will be as they are hard to resist!
If you don’t eat them all and want to save some for later, it is best to store them in a zip-lock bag in the fridge or freezer.
